This is a Junmai Daiginjo sake made with "Yumesasara" rice. "Yumesasara" is a variety that was developed by the Tochigi Agricultural Experiment Station in 2005. Over the course of more than 10 years, it underwent continuous improvements and was officially registered as a variety in February 2018.
