100% proprietary sake rice "Chosei-mai" is used. For the brewing water, two types of water were used: sacred water "Shimizu no yu-mizu" (soft water, 3.07 degrees of hardness) and in-house groundwater (hard water, 7.62 degrees of hardness). This sake is made with a focus on the ingredients of rice and water.
