Professional Review

"We recommend a Burgundy-style wine glass for this sake. It has two types of aroma: a yogurt-like animalistic strength that spreads around when poured, and a gentle aroma like white rice cooked in a traditional earthen pot. It has a well-balanced taste that truly embodies the essence of premium sake, with a particularly strong umami and sweetness but without any roughness or off flavors. The aftertaste is long, with a solid acidity towards the end, making it a sake that can elevate the taste of any dish. It can be enjoyed at any temperature, whether chilled, at room temperature, or warmed up. If served at a lower temperature, the aroma is more pronounced, while a warmer temperature brings out the sweetness."

Pairing Suggestion: Cut fruits (melon, Shine Muscat, Delaware), meuniere of tongue flatfish, tempura of fresh vegetables such as zucchini and eggplant.

"It is characterized by the rich aromas of ripe bananas, pineapple, and white peaches, accompanied by the fragrant notes of muscat grapes, fresh greenery like bamboo and mint, the intense scent of kinmokusei (sweet olive), and the harmonious blend of whipped cream and plum compote. There are also mineral and iodine undertones, with a subtle hint of savory soy sauce. The flavor is accompanied by a lavish sweetness, creating a vibrant and voluminous first impression in the mouth. This is followed by a delicate acidity that feels smooth, allowing a transparent umami flavor to gently expand and spread. The finish is clear and lengthy, with a subtle bitterness that adds richness. It is recommended to serve at a temperature range of 10 to 15°C in a large tulip glass."

Pairing Suggestion: Light appetizers featuring fruits and cream cheese.
