We polished the Omachi rice from Okayama Prefecture, also known as the "phantom rice," up to 50% and combined it with our first-ever 1001 yeast strain. Before tasting, we invite you to savor the delicate Ginjo aroma with a subtle sense of volume. This sake offers a smooth and mellow texture, with the distinctively robust and rich flavor of Omachi rice. By adding a touch of acidity to enhance the crispness, we have achieved a well-balanced sake of exceptional quality.
